SUNSHINE CARROTS 
7 or 8 med. carrots
1 tbsp. brown sugar
1/4 tsp. ground ginger
1 tbsp. cornstarch
1/4.c orange juice
2 tbsp. butter

Angle cut carrots about 1/2" thick. Cook and drain. Combine sugar, ginger, cornstarch and orange juice. Thicken and boil 1 minute. Remove from heat, add butter. Pour over hot carrots and serve. Serves 6 to 8.
