FRIED RICE 
3 tbsp. vegetable oil
1/2 c. onion, chopped
1 c. cooked pork or other cooked meat, chopped
1 (3 oz.) can sliced mushrooms, drained
3/4 c. green peas, cooked
3 eggs, beaten
4 c. cooked rice
1 tbsp. soy sauce

Heat large skillet over high heat and add 2 tablespoons of the oil. When oil is hot, add onion and stir-fry (stir constantly and quickly) until onion is golden brown. Add meat, mushrooms and peas. Cook 2 minutes, stirring constantly. Remove contents of skillet to a plate. Add remaining tablespoon of oil. When oil is hot, add eggs and stir- fry until done. Add rice to eggs, stir in soy sauce and reduce heat. Return pork and vegetable mixture to skillet and mix thoroughly with rice mixture. Continue heating until hot.
