GINGERED FRUIT COMPOTE | |
1 tbsp. cornstarch 1 tbsp. sugar 1/8 tsp. ground ginger 1 c. pineapple juice or orange juice 1 c. fresh blueberries 1 1/2 c. fresh strawberries 1 1/2 c. fresh pineapple chunks 1 c. sliced peaches Combine first 3 ingredients in a small saucepan; gradually add pineapple juice, stirring until smooth. Bring mixture to a boil over medium heat; boil 1 minute, stirring constantly. Remove from heat, and cool. Combine fruit in a large bowl. Pour sauce over fruit; toss gently; chill. Serves 8. |
