BERHN SCALLOPED POTATOES 
4 slices bacon
1 med. onion, thinly sliced
1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained
1 (5 oz.) pkg. scalloped potato mix
2 tsp. caraway seed
1 c. shredded Provolone or Mozzarella cheese

Cook bacon until crisp. Drain, reserving 2 tablespoons of drippings. Crumble bacon and set aside.

In the same skillet cook onions with reserved drippings until tender. Add spinach and heat through.

Prepare potato mix in a bowl (exclude butter). Stir in bacon, spinach-onion mixture and caraway seed.

Bake uncovered at 400 degrees about 35 minutes or until potatoes are tender. Sprinkle with cheese and bake 2-3 minutes more. Let stand 5 minutes and serve.

Serves 6.
