SOUTHWESTERN BAKED ZUCCHINI AND
CORN
 
1 lb. unpeeled zucchini, thinly sliced
1 med. onion
1/4 c. melted butter
1 can Mexi-corn
1 tsp. salt
1/4 tsp. pepper
1 tsp. chili powder
1 (8 oz.) can tomato sauce

Mix all ingredients and pour sauce on top. Bake uncovered at 350 degrees for 30 minutes or long and slow in crock pot. Makes 4 servings. Can be doubled.

Mexi-corn is available in grocery stores, but you can substitute regular canned corn and some finely chopped red and green peppers.
