SCALLOPED ZUCCHINI CASSEROLE 
1 zucchini, about 2 lb., peeled and cubed
1 med. onion, chopped
1 lg. green pepper, chopped
2 med. tomatoes, sectioned
1 lb. hamburger
1 tbsp. sugar
1 tsp. salt
1/4 tsp. pepper
Pinch of baking soda
Cheese and buttered bread crumbs

Boil zucchini in salted water until tender; drain well. Cook hamburger until slightly browned, add onion, green pepper, and celery. Simmer until vegetables are tender, add tomatoes and stir well. Add sugar, soda, salt, and pepper. Keep stirring until it stops foaming.

Layer zucchini and meat mixture in greased casserole. Top with cheese and crumbs. Bake at 350 degrees for 45 minutes.
