FRIED NOODLES 
1/4 lb. medium egg noodles
2 c. diced chicken, beef or pork
1/2 lb. cooked shrimp
1 tsp. salt
1 tbsp. sweet soy sauce
3 cloves garlic, chopped
1 tbsp. oil
5 cabbage leaves or 1 c. mustard greens, chopped coarsely
1 medium onion, chopped

Drop noodles in boiling water. Boil one minute. Drain and rinse in cold water.

Fry meat, garlic and red onion until light brown. Add soy sauce, cook and stir for 1 minute. Add cabbage, cooking for one minute only. Add shrimp, salt and noodles. Mix well. Just before serving, heat again.

Serve on oval platter garnished with fried red onions.

Serves 4 to 6.
