APRICOT SQUARES | |
1 c. butter, room temp. (do not substitute butter) 1 c. sugar 1 egg yolk 2 c. flour 3/4 c. chopped walnuts 1 (10 oz.) jar apricot jam (may substitute raspberry or strawberry) Preheat oven to 350 degrees. Cream butter with sugar in large bowl. Add egg yolk and mix well. Stir in flour. Add walnuts and blend well (dough will be soft). Divide dough in half. Spread half evenly into (greased) bottom of 9x13 inch baking dish. Cover with jam. Drop remaining dough by spoonfuls over jam spreading carefully to edges with knife. Bake well until top is golden, about 40-45 minutes. Let cool slightly before cutting into squares. |
