PUMPKIN COOKIES 
2 c. all purpose flour
1 c. quick oats, uncooked
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt (optional)
1 c. butter, softened
1 c. firmly packed brown sugar
1 c. granulated sugar
1 egg
1 tsp. pure vanilla
1 c. Libby's solid pumpkin, 100% pure
1/2 c. carob chips
1/2 c. unsweetened coconut

Preheat oven to 350 degrees. In medium bowl, combine flour, oats, baking soda, cinnamon, and salt. Cream butter in large bowl. Gradually add sugars, beating until light and fluffy. Add egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin to butter mixture. Mixing well after each addition. Stir in carob chips and coconut. Bake 8-10 minutes or golden.
