SOUTHWESTERN CHICKEN CASSEROLE 
3 to 4 c. cooked chicken
12 oz. grated Mozzarella
12 oz. grated cheddar (sharp)
1 (10 oz.) can red kidney beans
1 (12 oz.) jar salsa
3 c. crushed tortilla chips
Salt, pepper, chili powder to taste

Simmer cooked chicken, kidney beans, salsa, and seasonings on low heat for about 10 minutes. Prepare 3 quart casserole dish by buttering bottom and sides. Spread crushed chips to cover dish. Sprinkle 1/2 Mozzarella over chips. Pour chicken mixture into dish. Sprinkle rest of Mozzarella and cheddar cheeses. Put in oven for 20 minutes. Serves 8.
