SAUSAGE CAKE 
1 lb. real lean pork sausage
3 -1/2 c. flour
3 c. brown sugar
1 tsp. cloves
1 tsp. cinnamon
1 tsp. allspice
1 tsp. baking powder
1 tsp. nutmeg
1 c. raisins
1 c. chopped pecans
1 c. hot coffee
1 tsp. baking soda
1 small jar maraschino cherries (chopped, save juice)

Combine sugar, cloves, cinnamon, allspice, baking soda, baking powder, nutmeg, raisins, pecans, hot coffee, cherries and juice. Mix flour with sausage. Combine with above ingredients. Grease and flour pan. Line with wax paper, spoon cake batter evenly.

Bake at 250°F for about 1-1/2 hours (check with toothpick).

Sprinkle top of cake with chopped pecans, or decorate with cherries and pecan halves or leave plain.
