SAUSAGE CAKE 
1 lb. pork sausage
1 1/2 c. brown sugar
1 1/2 c. white sugar
2 eggs
3 c. all-purpose flour
1 tsp. ginger
1 tsp. baking powder
1 tsp. pumpkin pie spice
1 tsp. baking soda
1 c. water (or cold coffee)
1 c. raisins, soaked in boiling water, drained
1 c. chopped walnuts

In a mixing bowl, combine meat and sugars. Stir until mixture is well blended. Add eggs and beat well. On a piece of waxed paper, sift flour, ginger, baking powder and pumpkin pie spice. Stir baking soda into the water (or cold coffee). Add water alternately with flour mixture to meat mixture, beating well after each addition. Pour boiling water over raisins. Let stand 5 minutes. Drain well. Let dry on paper towels. Fold plumped raisins and chopped nuts into batter. Bake at 350°F for 1 1/2 to 2 hours.

I've been making this same recipe for years. It's great! People rave about it and are so surprised to hear it contains sausage. I will add that mild sausage should be used and bake it either in loaf pans or Bundt pan. Also, use RAW sausage, not cooked. The coffee is much better than water. It makes a very dense, spicy cake and should be cut in slices, not squares.
