HEALTHY OATMEAL COOKIES 
1 1/4 c. (2 1/2 sticks) butter
2/3 c. brown sugar, packed
1/3 c. granulated sugar
1 egg
1 tsp. vanilla
1 c. unbleached flour
1/2 c. whole wheat flour
1 tsp. baking soda
1 tsp. salt
2 1/2 c. oats (quick)
1/2 c. oat bran
3/4 c. raisins

Preheat oven to 375 degrees. In small bowl measure out flour, baking soda, salt, oatmeal and oat bran. In large bowl cream butter and sugars. Add egg and vanilla; beat until smooth. Gradually add dry ingredients. Stir in raisins. Drop by spoonfuls onto ungreased cookie sheet. Bake 8-10 minutes. Makes approximately 2 dozen cookies.
