RHUBARB OAT CRUMBLE 
1 c. oats
1 c. brown sugar
1 c. flour
3-4 c. chopped rhubarb
1 c. sugar
1 c. water
Red food coloring
1 tsp. cinnamon
1/2 c. butter
2 tbsp. cornstarch
1 tsp. vanilla

Mix first 3 ingredients together and press half of mixture in bottom of casserole dish. Spread rhubarb over crumbs.

Combine remaining ingredients and cook over medium heat until thickened. Cool slightly. Add vanilla and pour over casserole. Sprinkle top with remaining crumbs. Bake at 350 degrees for 50 minutes.
