GABLES CHICKEN MERINGOLO 
1 (4 or 5 oz.) chicken breast per person
Bread crumbs seasoned with garlic, oregano & salt & pepper
Lemon
White wine
Sliced tomato
Beaten egg
Mazola oil

Dip chicken breast in egg then in seasoned bread crumbs. Brown chicken on both sides. Put in oven proof pan. Pour 1/4" wine in pan. Top each piece with a slice of tomato. Squeeze lemon juice on each and drop lemon in pan. Remove after baking. Bake at 325 degrees for 30 minutes. Serve with rice and peas.
