CRANBERRY MUFFINS 
1 1/2 c. cranberries, halved
1/2 c. sugar
1 egg
1 c. milk
2 tbsp. melted shortening
1 tbsp. (or more) grated orange rind
3 tbsp. sugar
2 c. flour
3 tsp. baking powder
1 tsp. salt

Mix cranberries and sugar. Let stand while mixing remaining batter. Combine egg, milk, shortening, orange rind, and sugar in bowl. Mix remaining dry ingredients in another bowl. Add dry ingredients to egg mixture, stir until moistened. Put in greased muffin tins. Sprinkle with sugar. Bake at 400 degrees for 20-25 minutes. Makes 8-12 muffins.
