MILE HIGH POPOVERS 
1 c. milk
2 eggs
2 tbsp. melted butter
1 c. sifted flour
1/2 tsp. salt

Beat together melted butter and eggs with fork. Add milk. Add dry ingredients and mix until flour dissolves. Do not over beat or they won't "pop" properly. Best in 6 to 8 popover cup pan. Also works in 12 cup muffin tin. Fill well greased pans 1/3 full. Bake until well browned and crisp, beginning with cold oven. Bring oven temperature to 425 degrees for 10 minutes. Then reduce to 375 degrees. Total oven time approximately 45 to 55 minutes. Serve at once.
