QUESADILLAS 
1 tbsp. butter
8 flour tortillas (7 inch size)
1 (8 oz.) pkg. shredded Monterey Jack cheese
5 oz. sliced cooked ham, cut in thin strips
4 oz. chopped green chilies, drained
1/4 c. thinly sliced green onion
1/4 tsp. ground cumin
1/4 tsp. ground coriander
1/4 tsp. red pepper flakes
Med. hot salsa (optional)

Preheat oven to hot, 450 degrees.

Cut 8 pieces of foil, each about 9 inches. Butter circle in center of each piece of foil. Place 1 tortilla on each of 4 pieces of foil. Top each of these 4 tortillas with cheese, ham, chilies, green onion, cumin, coriander and pepper flakes, dividing evenly. Top with remaining 4 tortillas.

Place sheet of foil, buttered side down, on top of each tortilla sandwich. Roll up edges of foil all around to seal. Place on large cookie sheet. Bake in hot oven for 5 minutes until hot. Serve with salsa if desired. These can be made in advance and heated at serving time.
