STEAK DIANE 
6 boneless sirloin steaks (1/2 inch thick)
Salt and pepper
8 tbsp. butter
1/2 c. minced scallions
1 tsp. dry mustard
1 tbsp. Worcestershire sauce
2 tbsp. lemon juice
2 tbsp. chopped parsley
1 tbsp. chopped chives

Trim steaks of all fat. Pound steak to 1/4 inch thickness. Dry steak with paper towels. Sprinkle with salt and pepper. Cook steaks 1 minute on each side in 3 tablespoons butter. Remove to a plate. Melt remainder of butter in pan. Add scallions. Cook 1 minute, stirring constantly. Add dry mustard and Worcestershire sauce. Mix well. Add all other ingredients. Return steaks to pan. Cook 1 minute on each side.
