3 average size potatoes, washed, peeled and grated 4 large eggs 1 large onion, grated 5 tbsp. olive oil or vegetable oil salt to taste pepper to taste 1/2 tsp. garlic powder (add more or less to taste) 1/2 tsp. turmeric powder (add more or less to taste) 1/2 tsp. cinnamon (add more or less to taste) pita pocket bread, lettuce, tomatoes and pickles (optional) You will need 1 large round frying pan about 8 to 9-inches. Mix grated potatoes and egg in medium sized bowl with a fork. Add grated onions to bowl and mix. Add salt, pepper, garlic powder, turmeric and cinnamon; mix together. Heat 5 tablespoons of olive oil or vegetable oil in nonstick large pan and pour batter in pan. Smooth top of batter in pan until batter is evenly distributed and covering the bottom of the pan. Cover pan with lid. Place heat on low and slowly cook until bottom of Coo-Coo is cooked and golden medium brown in color. Cut Coo-Coo into 8 triangular pieces while in pan and turn pieces over with a large spatula into the same pan and cook until opposite side is a golden brown. You may need to add more oil to fry the opposite side. Do not cover pan with lid when cooking opposite side. You can serve the Coo-Coo alone or you can place a slice of Coo-Coo in a pita pocket with pickles, tomato slices and lettuce. Enjoy. Coo-Coo is also delicious when served cold. |
