FRESH STRAWBERRY PIE 
1 (9") baked pie shell
6 c. strawberries (about 1 1/2 quarts)
1 c. sugar
3 tbsp. cornstarch
1/2 c. water
Red food color
1 (3 oz.) pkg. cream cheese, softened

Wash and hull berries. Mash enough berries to measure 1 cup. Stir together sugar and cornstarch in a saucepan. Gradually stir in water and add crushed berries. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for 1 minute. Stir in a few drops of red food color. Cool mixture.

Beat cream cheese until smooth. Spread cream cheese on bottom of baked pie shell. Fill shell with remaining berries; pour cooked berry mixture over top. Chill at least 3 hours or until set.
