VILLAGE SALAD 
4-5 firm ripe tomatoes
1 clove garlic, cut
1 lg. cucumber, peeled and sliced
2 green peppers, sliced into rounds
3-4 sliced scallions
16-20 Greek olives
1/3 lb. Feta cheese
Salt, pepper, parsley, oregano

DRESSING:

2 parts olive oil
1 part red wine

Quarter tomatoes and place in large salad bowl rubbed with the cut garlic clove. Add cucumber, green peppers, scallions, Greek olives, Feta.

Shake dressing with salt and pepper to taste, then pour over salad. Toss lightly. Sprinkle with parsley and oregano and serve immediately. Serves 4.
