NICHOLE'S EASY PESTO EGG BURRITO 
Mexican "fiesta blend" cheese works well with this burrito!

PER SERVING:

1 tortilla
3 beaten eggs
1/4 cup diced onions (fresh or frozen)
1/4 cup diced mushrooms
1/4 cup dairy sour cream (I use light)
1 tbsp. pesto
2 tbsp. shredded cheese (optional)
salt and pepper, to taste
1 tbsp. olive oil

Sauté onions and mushrooms in olive oil for about 1 minute over medium heat. Add the eggs directly to the onion/mushroom mix and cook until desired. Sprinkle cheese over egg mixture. Microwave tortilla for 30 seconds and then add pesto to the dairy sour cream. Add eggs, wrap, and voila!
