ORANGE RAISIN CAKE 
1 cup sugar
1 cup buttermilk
2 cups flour
1 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. pure orange oil
1 cup raisins, chopped
1/4 cup butter
1/4 cup Crisco
2 eggs, beaten
grated rind of 1 orange, plus juice

In the bowl of an electric mixer, combine sugar, softened butter and Crisco together and beat until light and fluffy.

Whisk together flour, baking soda, baking powder and salt. Mix well.

Add dry ingredients alternately with liquid ingredients to butter mixture and beat for 2 minutes.

Bake for 1 hour in a preheated 350°F oven in a greased and lightly floured loaf pan.

Cool on wire rack 5 minutes before removing from pan.

Combine 1/4 cup sugar with juice and rind of 1 orange (a drop of orange oil may be added, if desired); pour this slowly over the top of the cake while it is still warm.

Variation: Top of cake may be frosted with vanilla icing before orange glaze is added.
