CARROT-WALNUT CAKE 
2 c. sifted flour
2 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. salt
4 eggs
1 c. cooking oil
3 (4 1/2 oz.) jars baby food strained carrots
1/2 c. chopped walnuts
Cream Cheese Frosting

Sift together flour, sugar, baking soda, cinnamon and salt into mixing bowl. Add eggs, oil and carrots. Beat with electric mixer at medium speed for three minutes, scraping bowl occasionally. Pour into two greased and floured 13x9x2 inch pans. Bake at 350 degrees for 30 minutes.

CREAM CHEESE FROSTING:

Combine: 1 (8 oz.) pkg. softened cream cheese 1/4 c. soft butter 1 tsp. vanilla

Beat until light and fluffy. This will frost both cakes.
