PEAS IN A BASKET | |
large tomatoes (1 per person) frozen peas (enough to fill tomatoes) butter salt and pepper, to taste Rinse tomatoes in cold water. Cut off the tops and save them (they will be used as "lids"). With a grapefruit spoon (regular spoons work as well), empty out the insides and put juice in a bowl. Leave a nice solid wall (about 1/4-inch thick). Note: DO NOT WASH OUT TOMATOES! Sprinkle inside of tomato with salt and pepper. Put a dab of butter (you judge the dab) in the bottom of the tomatoes. Fill to the top with peas. Pour in saved juice (again, you judge how much). Put another dab of butter on the top of the peas. Add more salt and pepper. Put on the lid and bake at 350°F until the peas and tomatoes are cooked to desired texture. ENJOY!
