ORANGE ALMOND CAKE 
1 c. flour
2/3 c. ground almonds
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
2 eggs
1/2 c. granulated sugar
4 oz. canola (or other vegetable) oil
6 oz. orange juice
Grated rind of 1 navel orange

Preheat oven to 350 degrees.

Thoroughly combine flour, almonds, baking powder, baking soda and salt. Set aside.

In a bowl large enough to accommodate all of the ingredients lightly beat the eggs. Add and beat in the sugar until pale yellow. Add and thoroughly incorporate the oil, orange juice and rind.

Fold the reserved dry mix into the wet mix. Bake in a a greased and parchment lined 8" round pan at 350 degrees just until the cake tests dry, about 35 minutes. Cool on a rack for five minutes before turning out.
