JUDY'S REFRIGERATOR GINGER COOKIES | |
3/4 cup shortening (Crisco) 1 cup sugar 1 egg 1/4 cup molasses (I use Brer Rabbit) 2 cups all-purpose flour 1/2 tsp. salt 1/2 tsp. ginger 2 tsp. baking soda Melt shortening and set aside to cool. When cool, put in mixing bowl and add sugar, egg and molasses. Stir until well blended. Then add dry ingredients. Stir as long as you can. Then form dough into round ball and chill for two hours. Remove from refrigerator and form into small balls, about hickory nut size. Place on cookie sheet and bake for 8 minutes at 350°F. Makes 3 dozen cookies. Submitted by: Judy Fisher |
