SHEPHERDS PIE (BRITISH) 
Before we start, let us be clear and lets get it right. Shepherds pie is made with lamb, cottage pie is made with beef. Never in the history of the British isles has cheese ever come close to either. If you see cheese anywhere near a recipe for either, put it down to the USA's obsession to add cheese to anything that moves - it doesn't generally belong with meat unless you desire lead in your stomach, this said.

1 lb. lean lamb, minced
1 large onion, sliced
1 medium carrot, chopped
1 stick celery, chopped
enough beef stock to cover
salt and pepper
3 to 4 tsp. corn starch or 2 Bisto (if you know what it is) and 1 corn starch
2 lb. good mashing potatoes
4 oz. (1 stick) butter
salt and pepper

Let's get this right and the best way: Add minced lamb into a casserole dish, add onion, carrot, celery, beef stock, corn starch and/Bisto/corn starch, salt and pepper, to taste, and stir.

Cook in a slow oven, say 275°F for 2 hours. You can do all this on stove top for about 20 minutes BUT the flavor is never the same.

When complete, drain off gravy and reserve.

Boil and mash potatoes with milk, butter, salt and pepper, however DO NOT make it into a wet paste. It should be firm and almost chunky.

Add back enough gravy to the meat to make it moist. Gently add the potato to the top and build up. Spread with a fork, finally making fork marks both up and down and across to form a basket like pattern.

Put oven temperature at 400°F, then bake until potato is crispy and golden on the peaks (about) 30 minutes.

Serve with remaining gravy and steamed cabbage (preferably Savoy, if you can get it). NO CHEESE, PLEASE.

Just had to add an actual REVIEW of the recipe....as I said, I followed it exactly as written and...... it was DELICIOUS!! My husband, who does not particularly like lamb (and who has had the beef version with cheese before--a dish most definitely not made by me as I am a lamb Shepherd's Pie Purist LOL) said this was "really good". P.S. I laughed at my own typo from my earlier post...I said "Cheese should not be sued"...LOL ...obviously, I meant to type "used"...but perhaps, it SHOULD be sued for being the cause of all this fuss...LOL

Shepherd = sheep-herder. If the meal were made with beef it would be called Cattleman's Pie or Cowboy Pie or some such. Makes sense to me. My mother (New England French-Canadian) made it with beef, but she was never known for her culinary skills or authenticity. So no offense taken, Neil. People should be passionate about food. I do like the suggestion that the meat and veggies be slow-cooked together in the oven, so I am going to try that. Off to the butcher right now in fact . . . .

Thanks, Neil. It's in the oven now! Lamb is a splurge for us so I hope the cooking method results in tender veggies and that I guessed right on "salt and pepper to taste" regarding the raw lamb mixture. Very simple and easy - hope it turns out. If so, I'll rate 5 stars. By the way, why is everyone so sensitive? Neil is like a cuddly kitten compared to Gordon Ramsey.

I was sad today my mom passed away 1 yr march and I miss her cheeky comments so I appreciated the no cheese comment although some may enjoy cheese my mom never used it, neither my granny. It would not have been acceptable. My granny and mom would have loved the cheekiness and recipe. Thanks. I find all your recipes easy and reliable.

Hi, just want to say been using this site for years never left a comment but I couldn't hold back. Was too funny. Am not a brit nor american but I think it went way overboard. tbh guys stop being that touchy about cheese lol, and pls stop taking it sooo darn personally, as I doubt neil meant it that way. I saw it more as "u want best result this is the only way ... Tone" so I raise glass to both brit and americans cheers from an outsider :)

I like Shepherds pie no matter what you put in it. So long as the person(s) eating it enjoy it I dont see any wrong way to make it, unless of course you just start going nuts with it and putting crazy stuff in it. But for me no matter what meat is in it it's good to me. And yes Traditional Shepherds pie does have lamb and not beef but like I stated above...Who cares, so long as everyone likes the taste. Thanks To Neil for the recipe to get started and to all others who have other ideas about what to add to it.

First off I'd like to say thanks to everyone for their ideas and variations...Secondly and further more what you put in your's is your choice you may like cheese and you may not, Neil was just trying to give a good old fashion straight forward recipe. You can always make something you have learned your own by adding whatever you want, doesnt mean the next lad or lass is going to do the same, it's just the general construct of the dish you have to look for, then go from there.
