ZUCCHINI BREAD 
3 eggs
1 c. cooking oil
2 c. sugar
1 tbsp. vanilla
2 c. grated zucchini
3 c. self-rising flour
3 1/2 tsp. cinnamon
1/2 c. chopped nuts

Beat eggs until foamy. Add oil, sugar and vanilla. Mix well. Stir in zucchini, add flour and cinnamon to egg mixture. Blend well and add nuts. Pour into 2 greased 9 x 5 x 3 inch loaf pans. Bake at 325 degrees for 1 hour.
