CHICKEN CASSEROLE 
4 c. diced, cooked chicken
2 c. cooked rice
1 c. diced celery
1 can cream of mushroom soup
1 c. Miracle Whip
1/2 pkg. Pepperidge Farm stuffing mix
1 stick melted butter

Combine chicken, rice and celery. Blend soup and Miracle Whip, then mix with the chicken mixture and place in a large oven proof casserole. Pour melted butter over stuffing and stir until stuffing is coated. Spread over chicken. Bake at 350 degrees for 30 minutes. Serves 8 to 10.

This can be split into two smaller casserole dishes, freezing one (before baking) for later use.
