SQUASH CASSEROLE 
3 lbs. squash (yellow or zucchini), fresh or frozen
1 grated carrot
1 lg. onion, sliced or diced
2 tbsp. pimento
1 can cream of chicken soup
1 soup can of sweet milk
1/2 pt. sour cream or cottage cheese
Salt and pepper to taste
1 stick butter, melted
Grated American or Cheddar cheese
1/2 pkg. Pepperidge Farm Stuffing Mix

Parboil squash, drain liquid. Mix all ingredients except squash, stuffing mix and cheese. Put layer of stuffing mix in large baking dish, layer of squash, then layer of mixed ingredients and add cheese with each series of layers. Repeat layers, ending with stuffing mix and cheese. Bake 25 minutes at 375 degrees.
