RECIPE COLLECTION
“CHERRY DATE ROLL” IS IN:

CHERRY DATE ROLL 
2 cups evaporated milk
4 cups sugar
1/2 cup (1 stick) butter
1 lb. pitted dates
1/4 cup candied cherries
1 lb. pecans, chopped
confectioners' sugar, for rolling

Combine milk and sugar; cook until thickened.

Add butter, stirring constantly until mixture forms a soft ball (234-240°F on candy thermometer).

Add dates; cook until dissolved and mixture is thick.

Remove from heat; add cherries and pecans. Beat until it hardens.

Roll on a damp cloth into a long roll. Let stand until hard. Roll in confectioners' sugar.

Cut as desired.

Cooks Note: Use of a candy thermometer is recommended.

Makes 5 to 6 pounds.
