SOPAIPILLAS 
4 c. flour
1 1/2 c. salt
1 tsp. baking powder
1 tbsp. sugar
1 tbsp. shortening
1 pkg. yeast
1/4 c. warm water
1 1/4 c. scalded milk

Combine dry ingredients and cut in shortening. Dissolve yeast in lukewarm water. Add to scalded milk (cooled to room temperature). Make well in center of dry ingredients and add liquid. Knead 15-20 times and set for 10 minutes. Roll dough to 1/4 inch and cut into squares and/or triangles and fry at 420 degrees in deep fat. Drain on paper towels and serve with honey for a meal or dust with sugar-cinnamon mixture for breakfast or dessert. Makes 4 dozen.
