CHEESE ROLL-UPS 
White bread, outside crusts removed
1 egg white, beaten with a little water
Melted butter
Sugar
Cinnamon

FILLING:

2 (8 oz.) pkgs. cream cheese
2 egg yolks
1/4 cup sugar
Apricot, cherry and raspberry preserves
Sour cream

Cut off crust and gently roll slices of bread to flatten and to approximately 1/4 inch thick. Make filling with cream cheese, egg yolks and sugar. Spread filling on pieces of bread and roll corner to corner. Moisten with egg white mixture to seal seams. Brush with melted butter and sprinkle with sugar and cinnamon. These can now be frozen and served later. Bake for 20 minutes at 400 if frozen; if not they will bake in less time. Serve with the above preserves and sour cream. Makes a real quick and easy treat to add to a bunch menu.
