ANGEL PIE 
4 egg whites
1 c. sugar
4 egg yolks
3 tbsp. lemon juice
1/8 tsp. salt
2 c. cream, whipped
1/4 tsp. cream of tartar
1/2 c. sugar
1 tbsp. rind

Beat until foamy: the whites and cream of tartar. Gradually add the sugar. Beat stiff. Spread in 9 x 13 inch pan. Bake at 275 degrees for 1 hour; cool. Cook until thick: the yolks, lemon juice, rind, salt and sugar. When cool, fold in 1 cup whipped cream. Spread over crust. Top with 1 cup cream, whipped.
