TIME MANAGEMENT TURKEY BARLEY
SOUP
 
10 to 12 lb. turkey carcass plus giblets
8 c. water
2 tsp. salt
1 clove garlic, cut up
10 black peppercorns
1/2 c. chopped parsley
2 c. chopped onion
1/3 c. regular barley
Dash paprika
1 c. sliced carrots
1 c. sliced celery
1 (10 oz.) pkg. frozen cut green beans

Place first seven ingredients in large soup kettle. Bring to boil, cover and simmer 45 minutes. Add barley; cover and continue cooking one hour. Remove carcass and giblets. Add paprika, carrots and celery. Cover and cook 10 minutes.

Meanwhile, remove meat from bones and cut up the giblets, add to soup with green beans. Return to boil, cover and continue cooking 5 minutes. Skim off excess fat and serve. Makes 8 servings.
