TIA'S ORIGINAL VELVET HOT CAKES 
3 egg yolks
2 tbsp. sugar
1/2 c. flour
2 tbsp. cornstarch
2 tsp. baking powder
Pinch salt
1/2 c. milk
1/2 c. sour cream
3 egg whites

First beat egg whites to stiff peaks. Then toss everything else into large bowl and with same beater mix thoroughly. Fold in meringue (egg whites) leaving mix quite lumpy with the egg whites.

Edges of cakes, when done, will be high and white, seemingly uncooked. But it; only the whites that don't brown at all. Serve with butter and granulated sugar. Syrup is desired.
