1 can Spam (luncheon meat, cubed)
1/4 c. chopped onion
1/4 c. chopped green pepper
1 tbsp. cooking oil
1 c. shredded Monterey Jack cheese
2 c. milk
1 c. biscuit mix
4 eggs
1/8 tsp. pepper

Saute Spam, onion, green pepper in oil until vegetables are tender. Spread into lightly greased (10 inch) deep dish pie plate, sprinkle with cheese. Mix the remaining ingredients in the blender or by hand until smooth. Pour evenly over ingredients in pie pan. Bake at 400 degrees about 30 minutes. Let stand about 5 minutes before cutting.
