OLD TIME PINEAPPLE UPSIDE DOWN

1/4 c. brown sugar, firmly packed
2 tbsp. butter, melted in 8 inch skillet
1 sm. can pineapple slices
1 sm. jar maraschino cherries

Spread brown sugar over the melted butter in skillet bottom; arrange pineapple slices around edges and one in the center. Place a cherry in each slice of pineapple.

Pour the following batter over all. Cream together: 2/3 c. granulated sugar

Add: 1/2 c. milk

Sift together and add: 2 tbsp. baking powder 1/2 tsp. salt 1 tsp. vanilla

Blend thoroughly first 3 ingredients, add milk alternately with dry ingredients. Beat for 2 minutes. Blend in vanilla. Pour batter over fruit. Bake at 350 degrees for 35 to 40 minutes. Serve with whipped cream or Cool Whip.
