FAJITAS 
Sliced chicken or beef

Marinate in chopped onion, chopped garlic, small amount of soy sauce, juice of 2 limes, 1 sliced bell pepper, pepper.

Marinate several hours or overnight. Fry quickly in hot oil, stirring often, a wok works well. Serve in warm flour tortillas with salsa and guacamole.

SALSA
3 or 4 peeled and chopped tomatoes
2 sm. chili peppers, chopped
1 tbsp. chopped onion
1/2 tsp. salt
Cilantro to taste

Carmen mixes this in the blender. Not too much, just a couple of on and off turns.

GUACAMOLE
2 lg. ripe avocados, mashed
2 small ripe tomatoes, peeled and chopped
2 tbsp. lime juice
1 sm. onion, finely chopped
1 sm. clove garlic, crushed
2 sm. jalapeno chilies
1/4 tsp. salt
1 tsp. chopped cilantro or parsley
Dash of Tabasco, if desired
