CRAWFISH CASSEROLE 
1 lg. onion, chopped
1 bell pepper, chopped
1/2 stick butter
1 can cream of shrimp soup
1 can Cheddar cheese soup
2 lbs. crawfish
Salt & pepper, to taste
2-3 c. cooked rice

Saute onion and bell pepper in butter. Add shrimp and Cheddar cheese soups. Cook for 10 minutes. Add crawfish and seasonings at this time. Cook for 10 minutes. Add 2 or 3 cups cooked rice. Put in casserole dish and cover. Bake for 20 minutes at 350 degrees.

This recipe sounded wonderful and it is - providing you add a couple of things. There has to be some liquid to thin the thick soup out. I used easily a cup of milk and it was still very thick. Also salt and pepper wasn't enough. I used old bay seasoning and a few red pepper flakes. I also added sliced celery but that is just me. It was perfect then :)
