CONFETTI CORN 
2 tbsp. butter
2 tbsp. onion, finely minced
1/4 c. frozen green & red chopped pepper
1 (10 oz.) pkg. frozen whole kernel corn
1 tbsp. parsley, chopped
Salt
Pepper

Place butter into 1 quart casserole. Microwave on high 45 seconds. Add onions and stir well. Microwave on high 2 minutes. Stir in peppers and corn, cover tightly. Cook in microwave on high 4-6 minutes or until tender. Let stand 5 minutes. Season with salt and pepper to taste. Sprinkle with chopped parsley. Makes about 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
