GREEN BEANS ALA ORANGE | |
1 1/2 c. water 1/8 tsp. salt 1 lb. fresh whole green beans, trimmed 3 tbsp. butter 2 tbsp. pine nuts or slivered almonds 1 tbsp. orange peel zest or strips In 10 inch skillet bring water and salt to a full boil. Add green beans. Cook over medium heat 5 minutes. Cover; continue cooking, stirring occasionally, until beans are crisply tender (10 to 15 minutes). Drain; set aside. In same skillet, melt butter. Add pine nuts; cook over medium heat, stirring constantly, until golden brown (1 to 2 minutes). Add beans and orange zest. Cover; cook over medium heat, stirring occasionally, until heated through (5 to 6 minutes). Yield: 4 (1/2 cup) servings. |
