TAPIOCA PUDDING 
2 c. milk
1/4 c. sugar
2 1/2 tbsp. quick cooking tapioca
1/4 tsp. salt
2 eggs, separated
2 tbsp. sugar
1 tsp. vanilla

In a 4 cup measure, combine milk, sugar, tapioca and salt. Separate eggs, placing whites in a large mixing bowl and adding yolks to the milk mixture. Beat until well combined. Cook, uncovered for 5 minutes 30 seconds or until mixture boils, stirring occasionally during the last half of cooking time. Beat egg whites until frothy. Gradually beat in 2 tablespoons sugar, continuing to beat until the mixture holds soft peaks. Fold in pudding mixture and vanilla. Serve warm or cold. If desired, fold in 1/2 cup finely chopped pecans, strawberries or other desired fruit.
