SALMON PATTIES 
1 (16 oz.) can salmon, drained
3/4 c. crushed crackers
1/2 c. chopped celery
1/2 c. milk
2 eggs, beaten
2 tbsp. chopped onion
1 tbsp. lemon juice
1/2 tsp. salt
Dash pepper
Slices or process cheese spread

Heat oven to 350 degrees. Combine salmon, crackers, celery, milk, eggs, lemon juice and seasonings; mix well. Form into 6 patties. Bake at 350 degrees for 25 minutes. Top each patty with a slice of cheese and return to oven until cheese melts.
