SPINACH-ORANGE TOSS 
6 c. (8 oz.) torn fresh spinach
1 (11 oz.) can drained Mandarin oranges
1 c. sliced fresh mushrooms
1 tbsp. lemon juice
3 tbsp. salad oil
1/2 tsp. poppy seeds
1/4 tsp. salt
3/4 c. toasted slivered almonds

Place torn spinach in a large salad bowl. Add Mandarin orange sections and sliced mushrooms. Toss lightly. Cover and chill.

For dressing, in a screw top jar, combine salad oil, lemon juice, poppy seed and salt. Cover and shake well. Chill. Shake again and pour the dressing over the spinach-orange mixture. Toss lightly to coat. Sprinkle toasted almonds on top and serve immediately.

Serves 6.
