CUCUMBER SALAD 
4 to 5 cucumbers
1 lg. onion
3 to 4 stalks celery
2 cloves garlic
1 tsp. oregano
Parmesan cheese
Salt and pepper
1/2 c. oil, Canola, sunflower, corn or Italian olive oil
1/4 c. wine vinegar
1 tbsp. mayonnaise, optional

In large salad bowl, use garlic press or sprinkle salt into bowl, peel and slice garlic and grind into salt with fork. Peel and thinly slice cucumbers, add finely chopped celery and onions and oregano.

Add oil, stir to coat cucumbers. Add vinegar and stir. Lemon juice may be used with or instead of vinegar.

Sprinkle generously with Parmesan cheese, add mayonnaise, stir and refrigerate 1 hour.
