SHRIMP GUMBO 
3 slices bacon (cooked until crisp)
3 tbsp. flour
1 c. green pepper, chopped
2 cloves garlic, minced
1 lg. okra (if frozen, thaw)
1 (16 oz.) can tomatoes
1 tbsp. sugar
2 tsp. salt
1 lg. onion, chopped
1 tbsp. Cajun seasoning
1/2 kettle water
1/2 lb. smoked sausage
24 oz. shrimp (peeled & deveined)

Cook bacon and set aside. Add flour to drippings and brown to a rich dark color. Add onion, pepper and okra to the flour roux. Cook until tender. Add bacon and remaining ingredients (except shrimp). Simmer covered for 1 hour. Add shrimp and simmer 30 minutes. Serve hot. Serve over rice. (For Chicken Gumbo, cook 4 boneless chicken breasts.)
