VEAL PAESANO 
4 to 6 oz. veal cutlet
Steamed broccoli
Prosciutto
Brown sauce (gravy)
Mozzarella cheese
Madeira or marsala wine
Egg batter
Butter
Salt and pepper to taste

Heat butter in a large skillet or saute pan. Dip veal in flour then egg batter, saute lightly on both sides. Drain butter from pan. Top veal with two thin slices of prosciutto, two pieces of steamed broccoli then two slices of Mozzarella cheese.

Add brown sauce and small amount of wine 2 ounces or more to taste. Simmer 5 to 7 minutes or bake in oven 5 minutes at 400 degrees.
